Blind Assessment: Crisp, balanced, delicately rich. Roasted cacao nib, caramel, fresh-cut fir, a hint of apple in aroma and cup. Round, quietly resonant acidity; syrupy mouthfeel. Flavor consolidates but rings on in a long, clean finish.

Notes: Produced at around 5,000 feet from trees of the Caturra variety of Arabica on Los Lirios (The Lilies) farm under the management of José Luis Rivera and his family. Certified organically grown. Irving Farm is a small-batch roaster based in the Hudson River Valley around 90 miles north of New York City focused on producing coffee that is attractive and sustainable through direct relationships.
