Blind Assessment: Deep-toned, richly bittersweet. Hop flowers, cocoa powder, goji berry, lemon zest, pecan in aroma and cup. Bittersweet structure with low-toned, crisp acidity; very full, creamy mouthfeel. Notes of pecan and cocoa characterize the gentle finish.
Notes: Produced by Kaleb Jordan entirely from trees of the Robusta species and processed by the honey method (skins are removed but at least some of the sticky fruit flesh is allowed to dry on the beans). Paradise Roasters specializes in micro-lot Arabica and Robusta coffees from Asia and other emerging origins. The company prides itself on quality and freshness, craft-roasting coffees in small batches only after orders are placed. Visit www.paradiseroasters.com or call 763-433-0626 for more information.
The Bottom Line: A Robusta coffee from Thailand that’s deftly darker-roasted to develop cocoa and deep nut tones.
