Blind Assessment: Evaluated as espresso. Gently roast-toned, nut-framed. Cashew butter, cocoa powder, fig newton, lily, cedar in aroma and small cup. Crisp, satiny mouthfeel; bittersweet, crisply nutty finish. In three parts milk, sweet pecan and cocoa powder quietly harmonize.
Notes: Produced by Kaleb Jordan entirely from trees of the Robusta species and processed by the semi-washed method (skins are removed but at least some of the sticky fruit flesh is allowed to dry on the beans). Paradise Roasters specializes in micro-lot Arabica and Robusta coffees from Asia and other emerging origins. The company prides itself on quality and freshness, craft-roasting coffees in small batches only after orders are placed. Visit www.paradiseroasters.com or call 763-433-0626 for more information.
The Bottom Line: An adeptly darker-roasted Thailand Robusta, with bittersweet nut and cocoa impulses supported by sweet florals and dried fruit notes.
