Blind Assessment: Delicate, complex, multi-layered. Wild honey, bergamot, freesia-like flowers, thyme, green apple in aroma and cup. Sweetly tart with citrusy-bright acidity; delicate, silky mouthfeel. Gentle tea-like finish with notes of bergamot and wild honey.
Notes: Produced by Sopa at her namesake estate (from the Typica and Catuai varieties of Arabica) in far northern Thailand where coffee is being planted as an alternative cash crop to replace opium. Paradise Roasters specializes in micro-lot Arabica and Robusta coffees from Asia and other emerging origins. The company prides itself on quality and freshness, craft-roasting coffees in small batches only after orders are placed. Visit www.paradiseroasters.com or call 763-433-0626 for more information.
The Bottom Line: A subtly distinctive, rare coffee from Thailand, worth seeking out for its nuanced, layered lyricism.
