Blind Assessment: A deep natural sweetness sustains every aspect of this coffee, from aroma through finish. Distinct fresh-cut fir in the aroma with hints of molasses and flowering grass. In the cup sweetly bright acidity, silky mouthfeel, and a complex set of flavors: brandyish fruit (grapefruit, ripe lemon, berry), cocoaish milk chocolate, molasses. Settles into a lemony chocolate in the long, rich finish.
Notes: Coffee from the Toraja region of the Indonesian island of Sulawesi, once Celebes, typically displays a wild and often earth-toned character, the result of the unorthodox "wet-hulled" method of fruit removal and drying. However, the clean sweetness and balance of this particular Sulawesi suggests it is a more conventional wet-processed or "washed" coffee.
