Blind Assessment
Deep, round, gently bright. Aprium, malt, lily-like flowers, baker’s chocolate, a hint of moist fallen leaves in aroma and cup. Sweet-toned, softly tart acidity; light, buoyant mouthfeel. Flavor consolidates in a long, sweet, very slightly drying finish.
Notes
This coffee originates from the Toarco (TOraja ARabica COffee) project in the famous Sulawesi coffee growing region of Toraja, a project developed and financed by Japan’s Key Coffee Company and its Indonesian partners. Until recently Toarco sold its entire production to the Japanese market, making this coffee rare in the United States. Toarco exports both conventionally washed coffee and wet-hulled coffee; this sample represents the latter.
