Blind Assessment
Deep-toned, savory sweet. Nougat-like almond, port wine, leather, cedar in aroma and cup. Tartly rich acidity, smooth mouthfeel, balanced though simple finish.
Notes
From trees of the much-admired Pacamara variety, a cross between the giant-beaned Maragogipe variety and Pacas, a dwarf selection of the heirloom Bourbon variety. This coffee is Rainforest Alliance certified, meaning it was produced following sustainable ecological and socio-economic criteria developed by the Sustainable Agricultural Network, a coalition of independent, environment-focused non-governmental organizations.
