Blind Assessment: Evaluated as espresso. Rich, deep, roundly tart and slightly savory. Rum-toned dark chocolate, ripe orange, plum, oak, lavender top notes in aroma and small cup. Light but silky mouthfeel; deeply chocolaty, lightly drying mouthfeel. Authoritative, perhaps a bit blunt, in three parts milk: plum-like fruit, oaky dark chocolate.
Notes: Comprised entirely of beans from the rare Sudan Rume, a presumably very old variety of Arabica originally selected from wild trees growing on the Boma Plateau of Sudan, close to the border with Ethiopia. Produced at Las Nubes farm, a leading experimenter with exotic varieties of Arabica. This is a “natural” or dry-processed version, meaning the beans were dried inside the fruit rather than after the fruit has been removed, as is the case with wet-processed or “washed” coffees. Creation Food is a food service company with a specialty coffee division. It operates one of the few large-scale coffee production facilities in Taiwan. The Bottom Line: A very interesting tree variety and tactful dried-in-the-fruit processing produces a subtly original and resonant espresso.
