Blind Assessment: Delicate, cleanly fruit-toned. Raspberry, cocoa nib, vanilla bean, magnolia, cedar in aroma and cup. Richly sweet with balanced acidity; lightly syrupy mouthfeel. The finish consolidates to cocoa nib and vanilla bean with undertones of raspberry.
Notes: Produced by Tony Castro of Finca La Joya entirely of the Paraneima variety of Arabica and processed by the natural method (beans are dried in the whole fruit). Merge is a specialty coffee roaster in Harrisonburg, Virginia dedicated to ethical sourcing of high-quality coffees. Visit www.mergecoffeeco.com for more information.
The Bottom Line : A very balanced, cleanly composed, natural-processed Honduras cup with delicate and lively berry notes throughout.
