Blind Assessment: Sweet-savory, richly aromatic. Dried apricot, young goat cheese, dark chocolate, lemon-thyme, sandalwood in aroma and cup. Savory-leaning structure with sweet-tart acidity; syrupy-smooth mouthfeel. Fruit-toned, chocolaty, tangy finish.
Notes: Produced by smallholding farmers entirely of the Red Bourbon variety of Arabica, and processed by the anaerobic washed method, with the addition of wine yeasts during the fermentation step.
