Blind Assessment: High-toned, elegant, fruit-centered. Passion fruit, lemon blossom, cocoa nib, marjoram, mesquite in aroma and cup. Deeply sweet structure with citrusy acidity; crisp, satiny mouthfeel. A balanced finish centers around passionfruit and cocoa notes with undertones of savory marjoram.
Notes: Produced entirely of the Yellow Caturra variety of Arabica, this coffee was processed in the whole fruit inoculated with a wine yeast strain and fermented in sealed bags (“anaerobic” ferment) before being dried using a combination of sun and mechanical methods.
