Blind Assessment: Delicate, deep, vibrantly sweet-tart. Lilac, dried apricot, cocoa nib, lemon verbena, cedar in aroma and cup. Sweet-tart structure with lively, bright acidity; plush, viscous mouthfeel. The resonant finish centers around notes of apricot and cocoa nib.
Notes: Southern Ethiopia coffees like this one are produced from traditional Ethiopian varieties of Arabica long grown in the region. Processed by the wet or washed method (fruit skin and pulp removed before drying). Founded in 2013, modcup coffee focuses on fresh roasting and distinctive natural-processed coffees. The Bottom Line : A high-toned washed Sidama cup complexly layered with notes of sweet fruit, tart herb, deep cocoa and flowers.
