Blind Assessment
Crisply and sweetly pungent. Dried persimmon, juniper berry, lemon blossom, slightly salty chocolate, raw almond in aroma and cup. Brothy, sweet-tart acidity; creamy mouthfeel. The richly drying finish leads with cocoa-toned dried persimmon in the short, followed by a hint of nut and perhaps lemon-blossom in the long.

Produced by farmer Isidro Lara from the Caturra and Catuai varieties of Arabica. This is a wet-processed or “washed” coffee, meaning the fruit skin and pulp were removed from the beans immediately after harvesting and before drying. This coffee is Rainforest Alliance certified, meaning it was produced following sustainable ecological and socio-economic criteria developed by the Sustainable Agricultural Network, a coalition of independent, environment-focused non-governmental organizations.
