Blind Assessment: Yeasty, richly sweet-savory. Fresh-baked bread, cinnamon, grape candy, baking chocolate, cedar in aroma and cup. Sweet-savory structure with very full, syrupy mouthfeel. The finish consolidates to cinnamon and baking chocolate, supported by fresh-cut cedar.
Notes: Processed by the anaerobic natural method (whole fruit subject to oxygen-restricted fermentation before drying). Jackrabbit Java selects the finest coffees from around the world and roasts them in Thermopolis, Wyoming’s mountain air. All Jackrabbit Java coffees are specialty-grade and roasted to order. The Bottom Line: An anaerobically processed coffee with rich structure and original and intriguing aromatics: think walking into a bakery redolent with yeast and cinnamon.
