Blind Assessment: Pungent and savory-sweet. Roasted cacoa nib and nut, lily, complex fruit (apricot, plum, blood orange), a hint of sweet licorice bark in aroma and cup. Rich, juicy acidity; lightly plush mouthfeel. Floral and cacao notes in particular carrying into a crisp finish.
Notes: Farmer Santiago Joven of Finca La Montanita is a member of the ASPROTIMANA cooperative. Founded in 2001 by thirty-two producers, ASPROTIMANA is now comprised of nearly ninety. Who Should Drink It : A distinctive variation on the classic Colombia profile, juicy with a crisp, engaging savory edge.
