Blind Assessment: Sweet, nut-toned. Pistachio, lilac, dried lemon zest, very ripe papaya, cedar in aroma and cup. Roundly sweet-tart in structure; delicately plump in mouthfeel. Nut and floral notes carry a quietly satisfying finish.
Notes: Produced by Rodrigo Sanchez Valencia on Finca Monteblanco from trees of the Purple Caturra variety, and processed by the natural method, meaning the beans were dried inside the fruit rather than after the fruit has been removed, as is the case with the wet-processed or “washed” coffees.
