Blind Assessment: Crisply sweet-tart, high-toned. Meyer lemon zest, cocoa nib, hazelnut, dried hibiscus flower, marjoram in aroma and cup. Bright, tart-leaning structure with juicy acidity; delicate, silky mouthfeel. Citrusy finish supported by tart florals and cocoa nib.
Notes: Produced by Wilson Roldan entirely of the Chiroso variety of Arabica and processed by the natural method (beans are dried in the whole fruit). Paradise Roasters specializes in micro-lot Arabica and Robusta coffees from Asia and other emerging origins. The company prides itself on quality and freshness, craft-roasting coffees in small batches only after orders are placed. Visit www.paradiseroasters.com or call 763-433-0626 for more information.
The Bottom Line: A vibrantly rich Colombia cup from the rare Chiroso variety of Arabica, grown only in parts of Colombia and offered by Paradise for the first time.
