Blind Assessment

Evaluated as espresso. Richly sweet, custardy milk chocolate notes dominate aroma and flavor, saved from simplicity by a green apple tartness and a hint of cedary pungency. The finish in the small cup is surprisingly tight and drying, but the roundly sweet, mousse-like chocolate notes and the hint of tart fruit make an impressive return in two parts milk.

Farmer Luis Alonso Araujo produced this coffee from trees of the much-admired, bold-beaned Pacamara variety on a section of his farm Los Alpes called El Banco, one of the three original plantings of the now-classic Pacamara variety as it emerged from the laboratory of Angel Cabrera. Pacamara, a cross between the giant-beaned Maragogipe and Pacas, a selection of the heirloom Bourbon variety, has proven to produce exceptional coffee on many Central American farms.
