Blind Assessment: Orange, raisiny chocolate, and pungent herbal notes in the aroma. Delicate in the cup, with continued orange-chocolate and pungent herb notes. Slightly bitter in the short finish, but smoothes out and sweetens nicely in the long.

Notes: This coffee, from Finca Muxbal, a farm in Chiapas, Mexico, is Rainforest Alliance certified, meaning it was produced following sustainable ecological and socio-economic criteria developed by the Sustainable Agricultural Network, a coalition of independent, environment-focused non-governmental organizations.
