Crisp baker's chocolate and heavy, lush, cherry-like fruit and brandy hints in aroma and cup. Wine-toned acidity; lightly syrupy mouthfeel. Rather heavy, sweet-salty finish.
This is a dry-processed or "natural" coffee, meaning the beans were dried inside the fruit rather than after the fruit has been removed, as is the case with wet-processed or "washed" coffees. In addition to his retail roasting operation Aroma Roast Coffees, Simon Hsieh also operates Soaring Phoenix Trading, a business focused on purposed-built commercial espresso blends and high quality single-origin coffees. Who Should Drink It
Interesting coffee for aficionados, first because it is grown in Taiwan, a rare origin, and second because it offers an interesting variation on the lushly brandy-and-chocolate dried-in-the-fruit cup.
