Blind Assessment: Quietly pungent, sweetly and gently roasty. Baked apple, singed oak, dark chocolate, a hint of orange blossom in aroma and cup. Mild, gentle acidity; syrupy mouthfeel. The crisp finish consolidates around apple and singed oak in the short and dark chocolate in the long.
Notes: This coffee is organic and Fair Trade certified, the latter meaning it was purchased from small-holding farmers at a “fair” or economically sustainable price. This is a wet-processed or “washed” coffee, meaning the fruit skin and pulp were removed from the beans immediately after harvesting and before drying.
