Blind Assessment
Richly and softly pungent. Dark honey, wisteria-like flowers, dark chocolate, sandalwood in aroma and cup. Soft but vibrant acidity; plush, lively mouthfeel. The finish consolidates around a deeply nuanced chocolate sensation.
Notes
This coffee was produced in Taiwan from trees of the Sumatra strain of Typica and processed by the conventional “washed” method, meaning the skin and fruit pulp were removed from the beans immediately after picking and before drying. In addition to his retail roasting operation Aroma Roast Coffees, Simon Hsieh also operates Soaring Phoenix Trading, a business focused on purpose-built commercial espresso blends and high quality single-origin coffees. Who Should Drink It
A coffee both elegant and exotic from a still rare origin. Taiwan readers in particular may want to buy it to support the home team.
