Blind Assessment
Earth-toned, vibrantly herbal. Ripe fig, lemongrass, caramel, fennel, dark molasses in aroma and cup. Richly sweet structure with gentle, round acidity; weighty, syrupy mouthfeel. The finish resonates with fig and dark molasses notes.
Notes
Produced by smallholding farmers, entirely of the Java variety of Arabica, and processed by the anaerobic honey method, in which some of the fruit flesh is removed from the beans, then fermented in an oxygen-free environment before drying. Corvus Coffee Roasters is based in Denver, Colorado and specializes in rare and exclusive coffees from some of the finest growers in the world. Corvus particularly focuses on processing methods and selective harvesting, which result in small, seasonal micro-lots of uniquely sweet, vibrant, and clean flavor profiles. Bottom Line
A bold and earthy Indonesia with sweet herbal complexity and a rich, molasses-inflected finish.
