Blind Assessment: Berry-driven, chocolaty. Blueberry, lemon zest, baking chocolate, cedar, a hint of fine musk in aroma and cup. Sweet-savory structure with quietly resonant acidity; syrupy, gently lively mouthfeel. Flavor consolidates to blueberry and cedar in the short finish but both linger far into the long.
Notes: Southern Ethiopia coffees like this one are largely produced from distinctive indigenous Ethiopian varieties of Arabica long grown in their respective regions. This is a dry-processed or “natural” version, meaning the beans were dried inside the fruit rather than after the fruit has been removed, as is the case with wet-processed or “washed” coffees. The Bottom Line: A fusion of fruit (blueberry) and savory (fine musk) drive the cup, punctuated by citrusy brightness.
