Blind Assessment: Deeply sweet, wood-framed. Agave syrup, fresh-cut oak, grapefruit zest, cocoa powder, date in aroma and cup. Sweet-savory structure with quiet acidity; very full, syrupy mouthfeel. The finish consolidates to notes of oak and agave syrup.
Notes: Produced from trees of the Caturra and Castillo varieties of Arabica and decaffeinated at origin in Colombia using ethyl acetate, an organic compound derived from sugar cane. Cimarron Coffee Roasters is a micro-roaster on the Western Slope of Colorado that aims to offer sweet, clean, affordable and sustainable coffee. Roast profiles are developed for each coffee to highlight the inherently distinctive properties of each lot. Shipping is included in the coffee price. The Bottom Line: Rich aromatic wood notes provide a base for crisp cocoa and citrus highlights.
