Blind Assessment: Crisp, deeply sweet. Cacao nib, honeysuckle, dried apricot, fresh-cut fir, agave syrup in aroma and cup. Sweet-tart structure with pert acidity; full, satiny mouthfeel. The richly drying finish centers around cocoa-toned date notes and sweetly pungent fir.
Notes: Produced by RWACOF Mushonyi, entirely from trees of the Red Bourbon variety of Arabica and processed at the privately owned Mushonyi Washing Station. This is a wet-processed or “washed” coffee, meaning the fruit skin and pulp were removed from the beans immediately after harvesting and before drying.
