Blind Assessment: Floral, tropical, tangy. Star jasmine, lychee, sandalwood, molasses, pistachio in aroma and cup. Sweet-tangy structure with gently bright acidity; lavishly smooth mouthfeel. Finish consolidates to pleasing notes of lychee and sandalwood.
Notes: Produced entirely from trees of the admired Pink Bourbon variety of Arabica and processed by the anaerobic natural method (whole fruit is fermented with limited oxygen before drying). Ilustre is a micro-roastery based in Tijuana, Mexico and San Diego, California that works closely with top Mexican producers and specializes in sourcing the highest-quality coffees. It is an international brand that ships to both the U.S. and Mexico. For more information, please visit www.ilustrecoffee.com.
The Bottom Line: A uniquely composed Colombia Pink Bourbon processed by the anaerobic natural method — suggests a tropical breeze in its floral and gently fermenty, fruit-toned levity.
