Blind Assessment: Quiet, complete; complexly chocolate- and fruit-toned. Dark chocolate, ripe black cherry, coconut, cashew, complex flowers (lavender, honeysuckle) in aroma and cup. The structure is sweetly juicy with a slight, deepening bitter edge. Light but satiny, lively mouthfeel. Drying though sweet finish, saturated with chocolate and flowers.
Notes: This exceptional coffee was selected as the No. 29 coffee on Coffee Review’s list of the Top 30 Coffees of 2017. Certified organically grown, and processed by the traditional wet or “washed” method, in which skin and fruit flesh are removed from the beans or seeds before they are dried. The Bottom Line : Quiet, elegant Peru, with chocolate and ripe fruit notes rounded and deepened by a very tactful, backgrounded medium-dark roast.
