Blind Assessment: Deep, quiet, gently chocolaty. Hazelnut, dark chocolate, fresh-cut oak, a hint of orangy citrus in aroma and cup. Simple, functional acidity; very lightly syrupy mouthfeel. Chocolate in particular carries into a dry but sweet-toned finish.
Notes: Produced by farmer members of CECOVASA, an association of cooperatives comprising more than 5,000 individual small-holding indigenous producers in a mountain valley in southern Peru.
