Blind Assessment

Crisply sweet, balanced, complete. Caramel, fresh-cut cedar, pear, hints of honeysuckle and soft citrus in aroma and cup. Delicately brisk acidity; light, buoyant mouthfeel. Hints of cedar and pear carry into a sweet though drying finish.

Notes

A wet-processed or “washed” coffee, meaning the fruit skin and pulp were removed from the beans immediately after harvesting and before drying. Finca Tres Soles, or “Three-Sun Farm,” is managed by Taiwanese agriculture and biology experts who plant 100% Arabica beans on their farm in Nicaragua.
