Blind Assessment: Evaluated as espresso. Rich, deep, roundly spicy. A particularly aromatic cedar plus caramel, almond butter, peach, rose-like flowers in aroma and small cup. Full, velvety mouthfeel. Flavor consolidates around a cedar-toned chocolate in a resonant finish. Crisp and delicate in three parts milk: continued cedar and chocolate.
Notes: A classic example of a fine Brazil dry-processed or "natural" coffee, meaning the beans were dried inside the fruit rather than after the fruit has been removed, as is the case with wet-processed or "washed" coffees. In addition to his retail roasting operation, Aroma Roast Coffees, Simon Hsieh also operates Soaring Phoenix Trading, a business focused on purpose-built commercial espresso blends and high quality single-origin coffees. The Bottom Line : A particularly deep, balanced straight shot, accessible, satisfying, resonant.
