Blind Assessment: Quite sweet with a crisp, bitter/savory edge. Delicate. Hazelnut, fresh-cut fir, flowers, a hint of bay leaf in aroma and cup. Balanced, quiet acidity. Lightly syrupy, lively mouthfeel. Flowers in particular carry into a delicately drying finish.
Notes: This coffee is certified organically grown and Fair Trade certified, meaning it was purchased from small-holding farmers at a “fair” or economically sustainable price. It was produced by the women-owned 21st de Septiembre Cooperative. It tied for third-place honors in the Central America & Mexico category at the 2014 HarVee awards for retail-roasted renditions of green coffees imported to North America by Sustainable Harvest Specialty Coffee Importers. Café Mystique is a small-batch roaster based in Montreal that places a particular emphasis on quality and sustainable practices in sourcing and roasting. Who Should Drink It: Those who enjoy coffees with a brisk, bracing character that derives from the green coffee itself rather than from darker roasting.
