Blind Assessment

Deep, complex, resonant. Butter, almond, caramelly chocolate, night-blooming flowers, ripe orange in aroma and cup. Round, richly expressed acidity; syrupy mouthfeel. Flavor consolidates but persists in a roundly drying finish.

Notes

This lot is comprised entirely of the much admired, bold-bean Pacamara variety of Arabica, a cross between the giant-beaned Maragogipe variety and Pacas, a selection of the heirloom Bourbon. Finca Kassandra, established in 1996 by the Rivas family, is located in the central region of the Mexican state of Veracruz near Totutla and Huatusco. Of the finca's 600 hectares, about 320 are dedicated to coffee production, and of the coffee production, 8% is Pacamara, which is separated and carefully milled. Gracenote Coffee is a small coffee roaster in Berlin, Massachusetts dedicated to making every roast better through coffee literacy, continuous and vigorous sensory analysis, and by caring a whole lot. Visit www.gracenotecoffee.com for more information.

Who Should Drink It

Those who enjoy the Pacamara pleasure: depth, resonance, low-toned fruit and flowers, sweet with a slight savory edge.
