Blind Assessment: Softly and opulently pungent. Dark chocolate, Concord grape, fresh-cut cedar, hints of vanilla and cinnamon in aroma and cup. Round, rather lush acidity; full, syrupy mouthfeel. Flavor consolidates in a long, resonant finish.
Notes: Produced from trees of the heirloom Bourbon variety of Arabica by the COOPAC cooperative (Cooperative pour la Promotion des Activities Café). Certified organically grown and Fair Trade certified, meaning it was purchased from small-holding farmers at a "fair" or economically sustainable price.
