Blind Assessment: Classic, bright, intense. Blood orange, honey, roasted cacao nib, fresh-cut cedar, a hint of lily-like flowers in aroma and cup. Richly tart acidity; buoyant, lively mouthfeel. The brisker notes – cedar and cacao nib – carry into a richly drying flnish.
Notes: Some of Colombia’s most admired coffees are produced in the mountain slopes of Huila. Founded in 1990, Lexington Coffee is an award-winning artisan roasting company based in Virginia. Who Should Drink It: Those who enjoy intense though nuanced acidity; a fine high-altitude Colombia in the classic style.
