Blind Assessment

Pungent, deep, slightly musky. Distinct dark chocolate, plum pudding, a musky note in aroma and cup. Roundly tart acidity; lightly syrupy mouthfeel. Flavor consolidates but persists in a rich finish.

Notes

This coffee was produced entirely from trees of the Pacas variety of Arabica, a compact-growing mutant of Bourbon first discovered and selected in El Salvador. Based in Morrisville, North Carolina, Muddy Dog Roasting is a small batch roaster focused on environmentally and socially responsible coffees and eco-friendly roasting. Who Should Drink It

Those who enjoy a deep, pungent variation on the classic Central America cup. The Bourbon heritage of the Pacas variety may account for some of the pungent depth of this rather distinctive profile.
