Blind Assessment:

Pungent, deep, slightly musky. Distinct dark chocolate, plum pudding, a musky note in aroma and cup. Roundly tart acidity; lightly syrupy mouthfeel. Flavor consolidates but persists in a rich finish.


This coffee was produced entirely from trees of the Pacas variety of Arabica, a compact-growing mutant of Bourbon first discovered and selected in El Salvador. Who Should Drink It: Those who enjoy a deep, pungent variation on the classic Central America cup. The Bourbon heritage of the Pacas variety may account for some of the pungent depth of this rather distinctive profile.
