Blind Assessment: A well-structured cup, delicate yet intense. Soft notes of aromatic wood, caramel and fruit in aroma and flavor. Gently tart acidity, silky mouthfeel. The aromatic wood character dominates in a sweet but slightly astringent finish.
Notes: This coffee is made up entirely of the heirloom Bourbon variety of Arabica and is Rainforest Alliance certified, meaning this coffee was produced following sustainable ecological and socio-economic criteria developed by the Sustainable Agricultural Network, a coalition of independent, environment-focused non-governmental organizations.
