Blind Assessment: Crisply sweet, chocolaty. Baking chocolate, hazelnut, vanilla bean, persimmon, fresh-cut cedar in aroma and cup. Sweet-toned structure with brisk acidity; smooth, velvety mouthfeel. The finish consolidates around suggestions of cedar-toned chocolate.
Notes: A blend of coffees from Colombia and Burundi, both processed by the washed method (fruit skin and flesh are removed from the beans before they are dried).
