Blind Assessment: Sweet, complex, briskly floral. Honey, lavender-like flowers, cocoaish chocolate, hints of fir and mint in aroma and cup. Softly bright acidity; silky mouthfeel. Very sweet, flavor-saturated finish.
Notes: Yirgacheffe coffees like this one processed by the wet or washed method (fruit skin and pulp is removed before drying) typically express great aromatic complexity and intensity with a particular emphasis on citrus and floral notes. In addition to his retail roasting operation Aroma Roast Coffees, Simon Hsieh also operates Soaring Phoenix Trading, a business focused on purposed-built commercial espresso blends and high quality single-origin coffees. Who Should Drink It: A coffee exhilaratingly exotic in its aromatics yet cleanly articulated and classic in structure.
