Blind Assessment: Deeply sweet, cocoa-toned. Dark chocolate, dried persimmon, hazelnut, wisteria, maple syrup in aroma and cup. Balanced, brisk but sweet structure with rounded acidity; satiny-smooth mouthfeel. The finish is thoroughly chocolaty with undertones of persimmon and hazelnut.
Notes: Southern Ethiopia coffees like this one are largely produced from distinctive indigenous Ethiopian varieties of Arabica long grown in their respective regions. This is a dry-processed or “natural” version, meaning the beans were dried inside the fruit rather than after the fruit has been removed, as is the case with wet-processed or “washed” coffees. Dory Coffee Roasters is a Taipei-based nano-roaster of specialty coffee. For more information, visit https://www.facebook.com/dorycoffee99/.
The Bottom Line: A balanced, engaging natural-processed Ethiopia cup characterized by cocoa-toned fruit and rich florals.
