Blind Assessment: Very sweet, floral, deeply rich. Date, tangerine zest, fresh pipe tobacco, freesia-like flowers, dark chocolate in aroma and cup. Complex and deeply rich structure; roundly tart acidity. Full, syrupy mouthfeel. The finish is dry but rings with rich tobacco and unsweetened chocolate far into the long.
Notes: Southern Ethiopia coffees like this one are largely produced from distinctive indigenous Ethiopian varieties of Arabica long grown in the region. This is a wet-processed or “washed” coffee, meaning the fruit skin and pulp were removed from the beans immediately after harvesting and before drying. Dou Zhai Coffee is a café and roastery on a quiet lane in Taoyuan City, Taiwan, that offers a wide range of exceptional coffees. Visit www.douzhaicafe.com.tw for more information.
The Bottom Line: A deep, satisfying coffee, accessible yet resonantly complex.
