Blind Assessment: Evaluated as espresso. Charred oak, baking chocolate, calla lily, browned butter and black cherry in aroma and small cup. Crisp, lightly velvety mouthfeel; the finish consolidates to cocoa-toned black cherry. In three parts milk, calla lily-like flowers and baking chocolate are amplified, while black cherry notes resurface in the long finish.
Notes: Southern Ethiopia coffees like this one are largely produced from indigenous Ethiopian varieties of Arabica long grown in the region. This is a “natural” or dry-processed version, meaning the beans were dried inside the fruit rather than after the fruit has been removed, as is the case with wet-processed or “washed” coffees.
