Blind Assessment: Delicately sweet, berry-toned. Strawberry coulis, cocoa nib, freesia-like flowers, hazelnut, cedar in aroma and cup. Sweet structure with brisk acidity; crisp, satiny mouthfeel. Cocoa-toned finish with quiet strawberry notes carrying into the long.
Notes: Produced at Hambela Estate, operated by exporter METAD, which also oversees the only privately-owned quality-control laboratory in Ethiopia that carries Specialty Coffee Association (SCA) certification. Processed by the natural method (dried in the whole fruit). SkyTop Coffee is a USDA certified-organic specialty coffee roaster based in Manlius, New York. The Bottom Line: A clean, delicate natural-processed Ethiopia cup, balanced and cocoa-toned with hints of spicy florals throughout.
