Blind Assessment
Sweet-toned aroma with some brightness and woody nut and cherryish fruit notes. Soft acidity, silky mouthfeel. The cup is delicate, sweetly balanced, with tart cherry and nut that grow increasingly woody as the cup cools. Sweet finishing, with a slight decaf sourness that also intensifies as the cup cools.
Notes
A blend of dark and light roasted Peru coffee from the Pangoa Cooperative, decaffeinated by the "water only" method without use of solvents. Certified organically grown. Although this coffee is described as "100% Fair Trade" on the front of the colorful bag, the absence of the trademarked Fair Trade seal indicates it is not certified by TransFair USA, the sole American certifier for the Fair Trade Labeling Organizations International (FLO). Just Coffee is, however, affiliated with the buyers' group Cooperative Coffees as well as the Fair Trade Federation, a membership (rather than certifying) organization devoted to "providing fair wages and good employment opportunities to economically disadvantaged artisans and farmers worldwide."
