Flying Goat Coffee
El Salvador Siberia
|Roaster Location:||Healdsburg, California|
|Coffee Origin:||Santa Ana Department, El Salvador.|

Blind Assessment: Complete and classic Central-American style cup, lively and delicately complex. Cherryish-chocolate fruit and a shimmering hint of flowers in the aroma. In the cup gentle acidity, tart cherry and milk chocolate notes, continuing hint of flowers. The surprisingly rich finish simplifies slightly as the cup cools.
Notes: Certified organically grown. Grown under mixed species shade. Comprised entirely of beans of the Pacamara variety, a cross between the giant-beaned Maragogipe variety and Pacas, a selection of the heirloom Bourbon. Pacamara has proven to produce exceptional coffee on many El Salvador farms. Flying Goat Coffee is a leading boutique retail/wholesale roaster located in the wine country of northern California. Who Should Drink It: A classic breakfast coffee: complex, buoyant, delicate, familiar but exceptional.
