Blind Assessment: Deeply sweet-savory, unusual. Caramel, goat milk yogurt, raspberry, cedar, sage in aroma and cup. Richly bittersweet in structure with bright acidity; syrupy mouthfeel. Savory-leaning finish with undertones of caramel and sage.
Notes: Produced at San Gabriel Farm entirely of the admired SL28 variety of Arabica, and processed by the anaerobic natural method (whole fruit is fermented with limited oxygen before drying).
