Blind Assessment: Crisply sweet-tart. Green apple, magnolia, oak, maple syrup, almond in aroma and cup. Sweet-tart structure with brisk acidity; delicate, silky mouthfeel. Almond and apple notes lead in the quiet finish.
Notes: Produced at Hacienda La Minita and processed by the honey method (skin is removed but at least some of the sticky fruit residue is allowed to dry on the bean). RamsHead Coffee Roasters is a family-owned company founded by Bozeman, Montana natives Caleb and Laura Walker, specializing in direct trade microlot coffees. The Bottom Line: A crisp, high-toned Costa Rica honey-processed cup. Notes of tart apple and sweet florals throughout, supported by deep nut tones.
