Blind Assessment: Rich aroma with layered nuances of sweet cherry, stone fruit, nut and chocolate. In the cup, gentle but sustained acidity, lightly syrupy mouthfeel and softer fruit flavors, tending toward tarter cherry and sweet citrus. Chocolate remerges in the finish along with a note of aromatic wood.
Notes: Part of a trilogy of blends, “Trio” combines three coffees and is intended to mimic the flavor profile of high-quality Taiwanese tea. In addition to his retail roasting operation, Aroma Roast Coffees, Simon Hsieh also runs Soaring Phoenix Trading, a business focused on purposed-built commercial espresso blends and high quality single-origin coffees. Who Should Drink It: Complex, shifting fruit intrigue in a quietly exotic cup.
