Balanced, complete: a graceful expression of flowers and cocoa. Plum, narcissus, dark chocolate, hints of baking spice. Round, quietly floral-toned acidity; light, buoyant mouthfeel. Sweet-toned, crisp finish.
Produced by Johan Vergara entirely of the Sidra variety of Arabica, and processed by the washed anaerobic method, in which the fermentation step occurs in a hermetically sealed vessel before the beans are washed and dried. Sidra is an Ethiopian variety of coffee that at some point in its history was selected and brought to Ecuador, then to nearby Colombia. Kakalove Café is a nano-roaster located in the small city of Chia-Yi in Taiwan that strives to procure and roast the finest quality coffee. A smooth, subtle cup both lively in its floral- and chocolate-toned detail yet soothing and coherent overall.
