Blind Assessment
Evaluated as espresso. High-toned, sweetly tart. Pomegranate, tangerine, dark chocolate, myrrh, cedar in aroma and small cup. Viscous, syrupy body; crisply sweet-savory finish. In three parts milk, a pretty floral note akin to orange blossom emerges alongside cedar.

Produced by Yesid Castañeda of Finca Las Delicias, from trees of the Pink Bourbon and Typica varieties of Arabica, and processed by the double-anaerobic method (fermented in an oxygen-free environment, then dried in the whole fruit).
